I need a good vegan mac and 'cheese' recipe. By good I mean awesome, not "throw 1/4lb nutritional yeast into a cup of soy milk" because believe me, those recipes exist on the Internets.

Something equivalent to Hungry Tiger's vegan mac and cheese would be totally acceptable.

This is for a Special Dinner(tm). Annnnd... GO!

I am especially fond of the Mac Daddy recipe in Veganomicon! It's even baked. So good.

The other one that works, although it tastes almost exactly like Velveeta:

Melt a few tbsps of margarine in a saucepan over medium heat
Whiz a block of silken tofu in a blender till it's completely creamy, add to the pot
Shred a brick of Follow Your Heart's "cheddar" and stir in pot until it's melted
Mix into macaroni

Yup! The library might have it. If they don't, most of the bigger bookstores do.

For something that doesn't taste a thing like cheese, but has the "bland, creamy, and orange" thing going for it, you can use the butternut squash soup from one of those tetra-pac containers and add noodles. I did this once thinking I was going to get a more exciting flavor adventure and basically concluded that I'd ended up with vegan mac and cheese.

Anyway, this is from a person who thinks that the best substitute for ham is avocado, so I'm really not one for replacing with similar objects.
